My go-to sandwich is Anthony Bourdain's mortadella sandwich because of how easy and delicious it is. I've also subbed the mortadella for ham depending on whats on sale for the week so it's really versatile!

Hearing Stephen talk about sandwiches reminds me of how sad I am that Subway took away the oven roasted chicken from their place. I miss having it whenever I go to Subway
The only type of chicken cold cut I like is Buffalo chicken, so I get it. Also! If you wanna try something with the roast beef, we make sandwiches with garlic bread and mozzarella or munster, and you warm the beef to make it closer to steak. Its great :)
Deli chicken isn't all created equally sadly, you're definitely better off with some from an actual deli rather than Kirkland's. That said, it could also be a preparation issue because deli chicken doesn't have a strong flavor note of its own like turkey so it's one you can combine more easily with other stronger flavors. Some mayo and seasoning (like Mrs. Dash even) would probably go a long way. You might also try something sweet like a sweet relish or some thin sliced apples.
Hearing the sandwich laments as a german, where it's very normal to just get a nice slice of bread (not toast, like proper, darker bread), butter it and just putting this kind of meat on it (NOT in five thick layers, usually just one thin one), is just funny. Maybe you'd like it more if you didn't try to make it a whole thing and just have it this way?
I work at a deli, so I definitely understand tbe "mehhhhh" of the sliced meats. I will tell you it really depends on the brand. Is havent had the kirkland brand, but the Dietz and Watson is superior imo

I had a reaction to my allergy shots last week and they EpiPen'd me out of caution (trouble breathing). Dang immune system needs to calm down!
